Tortiglioni with peas, broad bean, spring onion and guanciale
Ingredients for 4 people
  • 14 oz PGI Gragnano Tortiglioni
  • 7 oz Peas
  • 7 oz Broad beans 
  • 1 Spring onion
  • 1/2 Glass of white wine
  • 3 oz Pig’s cheek lard
  • to taste EVO oil
  • to taste Salt and pepper


PREPARATION

  1. Brown the onion in a saucepan with a bit of olive oil for a few moments, add the pork cheek (guanciale) and brown, add the white wine.

  2. Then add the broad beans and peas, continuing to cook over low heat.
